your itinerary is the overall plan for your journey - the itinerary items are steps in that journey that show where you are going, things that you are doing or places that you are staying at along the way

for some of us the itinerary will be very detailed:

day 1 arriving in Buenos Aires, going to La Boca, staying at Malabia House, meeting Jim and Pete at Milion bar for drinks
day 2 travelling from Buenos Aires to San Antonio de Areco, staying at Estancia el Ombu, going on a 3-hour horse-riding excursion organised by company Andando en Areco

for others it will just give the overall idea of what we plan to do:

day 1 flying from London to Buenos Aires
day 32 by boat from Buenos Aires to Colonia, Uruguay
day 38 flying from Uruguay to Ecuador

you create an itinerary so that you can plan your journey (in detail or at a high-level) for yourself and we have safety features that you can use to let people know where you are at steps along the way (or if you don't check-in). You can share your itinerary with friends and family back home so that they know where you plan to be and when, which gives them peace-of-mind and helps them feel part of your journey.
